How to Make Black Truffle Salt

Black truffles are very easy to grow and in fact are probably the easiest of all the fungi to cultivate. And why not, who doesn't like the flavour of truffles?

Well if you have some black truffles that you want to preserve, the way you can do this is by making your own black truffle salt. Why, it really is quite simple actually. And if you're really adventurous you can even make truffle salt from the shells of truffles that you buy, because these too can be made into salt.

The first thing you need to do is to get an old wine bottle or a deep sided pot that you can seal with a lid on. Get a glass jar and fill it with some clean soil and some old compost. Make sure that the jar is tall enough so that the soil in it doesn't get squashed out when you pour your truffle salt in. Place the jar and pot in a dark place and remember to get some good quality lighting so that you can see what you're doing.

Now you should get some black truffles. Because this requires time and patience, it's best to start buying your truffles when they are still fresh and small. This is because smaller truffles are better for cultivation. You could also use dried truffles, but if you have been making your own truffle salt, then you'll know that dried truffles tend to be harder to get, and furthermore they can spoil very quickly.

When you're going to buy your truffles make sure that you're getting them as fresh as possible, because there are certain times when the taste of truffles deteriorates. So if you're buying them right at the moment of the truffle season or when you're going to prepare your own black truffle salt, then you should always make sure that you've got a bunch of them. Get the freshest ones you can get, preferably in two or three pieces, or else they'll lose their flavour. The reason why you want the freshest truffles you can get is because they will last longer.

Now go into your pot and crush some seeds and the stems that are growing in the soil. You may feel intimidated by this process but you'll find that with practice you'll learn to get a grip and it won't be that hard. When you're getting the seeds and stems out of the pot, be careful not to damage any of the truffles. The reason why you don't want any damaged truffles is because if you're going to use the crushed seeds and stems in your black truffle salt you need them to retain their essential qualities. If you crush them into mush you'll kill all the goodness that they contain.

Now the next step in preparing your black truffles for salt is to look for some cloves and parsley. Place all these ingredients in your jar and pour some salt over them. Seal the jar tightly and leave it to get a little bit of air so that it can settle.

After a few days, you should see some black truffles settling at the bottom of the jar. In this jar you'll find your truffle salt. You'll notice that the salt has a very distinct taste, which is due to the mint that you added.
